Picked some #veggies this morning in moms garden and made us some toasted hummus sammiches for lunch!

This weekend I was in the Poconos with my mother and we cooked some stir-fry together, which was really nice (and delicious). Here’s my quick recipe:

Cut up a bunch of different veggies, whichever ones you like best. We had organic red and green peppers, baby bello mushrooms, carrots, cauliflower and onion. While you are at it, drain your tofu and cut it up into strips. Take about 3 tbsps of olive oil and get it pretty hot on the skillet. Drop the tofu strips in there and deep fry them in the oil, turning them occasionally until crispy. Then remove them from the skillet and place them on a paper towel to soak the oil.

Now get the oil going again and place all of your veggies in there. Stir constantly, and add 1 tsp of sugar, and 2 tsps of salt (I like to use Crystal Himalayan Salt). Then add 3 tsps of Vodka (yes. vodka) and 1 tsp of soy sauce. While stirring have the water boiling for the noodles.

When your water has boiled, snap your noodles in half, and drop them in the water. Boil for exactly one minute, and then drain.

Now you can feel free to combine everything on your skillet: noodles, tofu and veggies. Add another 1 tsp of soy sauce and fry for about 3-5 minutes, depending on how crispy you want your noodles.
